One of the challenges of camp cooking is the amount of time it takes. It’s not a problem if it is just the troop out camping and the schedule is a little more relaxed. But if it is an event with a fixed schedule – like a district camporee – then time is a little more of a concern. So sometimes the grubmasters need something simple.

- Marshmallow forks (optional)
- 4 English muffins
- 6 slices ham cubed
- 4 eggs
- 4 slices American cheese
- Prepare your fire.
- Split the English muffins and butter both sides. Toast over fire on the grill or on marshmallow forks. Whisk the eggs in a mixing bowl. Put the ham in a hot greased skillet and add the eggs. Scramble the eggs and ham until the eggs are set.
- Put 1/4 of mixture on to half of an English muffin. Top with 1 slice of cheese. Put the other half of the English muffin on top. Wrap in aluminum foil. The sandwiches will stay warm for about 15 minutes.
