Ingredients
- 4 English muffins
- 6 slices ham, cubed
- 4 eggs
- 4 slices American cheese
- Butter
Setup Instructions
- Start by preparing your fire. Make sure it has burned down to hot coals before cooking.
- Set up the grill over the fire or have marshmallow forks ready if you’re toasting directly over the flame.
- Grease the skillet lightly with butter or oil so it’s ready to cook.
Recipe Instructions
- Split the English muffins and butter both sides.
- Toast the English muffins over the fire on the grill or by using marshmallow forks until golden.
- In a bowl, whisk the eggs.
- Place the cubed ham in the hot, greased skillet over the fire. Add the eggs to the skillet and scramble until the eggs are set.
- Scoop about 1/4 of the egg and ham mixture onto the bottom half of each toasted English muffin.
- Place a slice of cheese on top of the egg and ham mixture, then add the top half of the muffin.
- Wrap each sandwich in foil to keep warm for up to 15 minutes.
Notes
- Variations: Try adding sliced tomatoes, cooked sausage, or different types of cheese for variety.
- Safety Tip: Make sure the skillet handle isn’t over the flame, as it can get very hot. Use oven mitts or a thick cloth when handling.
