Camp McMuffins Recipe

One of the challenges of camp cooking is the amount of time it takes. It’s not a problem if it is just the troop out camping and the schedule is a little more relaxed. But if it is an event with a fixed schedule – like a district camporee – then time is a little more of a concern.  So sometimes the grubmasters need something simple.

This is an easy and quick recipe for a breakfast at camp. It doesn’t require a lot of preparation or ingredients, but you still get a good breakfast to start a busy day of hiking or swimming or biking or canoeing or …

Camp McMuffins

Equipment:
Grill
Bowl
Skillet
Marshmallow forks (optional)
Foil

Ingredients
4 English muffins
6 slices ham, cubed
4 eggs
4 slices American cheese
Butter

Prepare your fire.

Split the English muffins and butter both sides. Toast over fire on the grill or on marshmallow forks. Whisk the eggs in a mixing bowl. Put the ham in a hot greased skillet and add the eggs. Scramble the eggs and ham until the eggs are set.

Put 1/4 of mixture on to half of an English muffin. Top with 1 slice of cheese. Put the other half of the English muffin on top. Wrap in aluminum foil. The sandwiches will stay warm for about 15 minutes.

Serves 4
