  • 6 slices ham, cubed
  • 4 eggs
  • 4 slices American cheese

Setup Instructions

  1. Start by preparing your fire. Make sure it has burned down to hot coals before cooking.
  2. Set up the grill over the fire or have marshmallow forks ready if you’re toasting directly over the flame.
  3. Grease the skillet lightly with butter or oil so it’s ready to cook.

Recipe Instructions

  1. Split the English muffins and butter both sides.
  2. Toast the English muffins over the fire on the grill or by using marshmallow forks until golden.
  3. In a bowl, whisk the eggs.
  4. Place the cubed ham in the hot, greased skillet over the fire. Add the eggs to the skillet and scramble until the eggs are set.
  5. Scoop about 1/4 of the egg and ham mixture onto the bottom half of each toasted English muffin.
  6. Place a slice of cheese on top of the egg and ham mixture, then add the top half of the muffin.
  7. Wrap each sandwich in foil to keep warm for up to 15 minutes.

Notes

  • Variations: Try adding sliced tomatoes, cooked sausage, or different types of cheese for variety.
  • Safety Tip: Make sure the skillet handle isn’t over the flame, as it can get very hot. Use oven mitts or a thick cloth when handling.
